Vegan Pigeon Salad

 

For some reason, salads have a bad reputation – People think that they are boring! I couldn’t disagree more. Personally, I can eat at least one salad a day and I love it. I thoroughly enjoy the freshness, the textures, colours, flavours and the fact that I’m eating something that nourishes my body. If you don’t like salads you should definitely give this one a shot. Epic Salad

Veggie Salad is such a great meal and it's packed with vitamins and minerals, fibres, flavours and textures.

Equipment

  • Stove + Pan

Ingredients
  

  • 4 Cups Mixed Greens Lettuce, Arugula, Spinach
  • 1 Small Cucumber Persian cucumber.
  • 1 Small Tomato Sliced
  • 1/3 Cup Chopped up Bell Peppers Green/yellow or red.
  • 3/4 Cup Chopped fennel
  • 1 Celery Stalk
  • 1/2 Avocado
  • 3-4 Artichoke hearts or fresh mushrooms.
  • 6-8 Slices Fried Yam
  • 6-8 Slices Fried Eggplant
  • 1/2 Cup Cooked rice or quinoa
  • Handful Mixed seeds Sunflower, pumpkin, flax.

Instructions
 

  • This recipe is pretty straightforward - it's a vegetable salad after all. Make sure all your veggies are well washed and after you chop/slice/fry and finish prepping - you can plate it however you like.
